Chicken on a Beer Can
2
20 oz cans of beer, any kind
2 whole chickens
1-1/3 cup Traeger BBQ Sauce
1 16 oz jar Traeger Chicken Rub
In a
bowl mix beer and barbecue sauce together. Lightly rub inside and outside
of chicken with Traeger Chicken Rub. Divide and pour liquid mixture into 2
(20) oz empty beer cans. Place one chicken right side up over each beer
can. Start your Traeger and switch to “High” for 10 minutes, and then
switch to “Medium”. Place chickens and beer cans top side up on grill.
Cook on medium approximately 1 to 1 ½ hours. Carefully remove chickens and
cans from grill, discard beer cans (use hot mitts). Cut up chicken and
serve. Serves 8-10 people.
Recommended pellets: Oak or Hickory.
Lemon Pepper Chicken
1
fresh cut up fryer chicken
3 tablespoons lemon pepper
1 16 oz jar Traeger Chicken Rub
Wash
chicken in cold water and towel dry. Put Traeger Chicken Rub and lemon
pepper into a bowl and combine both ingredients. With wet hands, dip your
fingers into the dry rub mixture and lightly wipe down the outside of the
chicken. Let chicken set in refrigerator for 1 hour. Start your Traeger
and switch to “High”. Lay chicken out on grill and cook for 20 minutes,
turn once and cook for 20 minutes or until done. Serves 4 people.
Recommended pellets: Maple or Cherry.
Honey Mustard and Bourbon Wings

lbs fresh or frozen chicken wings, trim off tips
¼ cup bourbon or whiskey
4 tablespoons dry mustard
1 tablespoon yellow or brown mustard seeds, crushed
½ cup honey
In
small bowl, combine honey, dry mustard, bourbon and mustard seeds until
mixture is well blended. Rinse chicken wings in cold water and towel pat
dry. Arrange wings in a shallow baking pan and moderately paint each wing
with the mixture. Reserve some of the mixture for grilling. Start your
Traeger and switch to “Medium”. Spray grill with cooking spray and
transfer wings from baking dish to grill. Leave room between wings for
best result. Cook on medium approximately 20-30 minutes. Lightly brush
mixture over wings. Be careful not to scorch wings. After 30 minutes, turn
over and continue to cook and brush wings with liquid mixture until done.
(For an awesome effect, switch to smoke and smoke for ½ hour before
serving.) Serves 8 people.
Recommended pellets: Hickory or Maple.
Italian Chicken
1
medium sized chicken
1 bottle Italian (vinegar and oil type) salad dressing
Wash
chicken in cold water, drain on paper towels. Mix up Italian dressing and
pour into a resealable plastic bag, add chicken and marinate in the
refrigerator overnight. Start your Traeger and pre-heat for 10 minutes.
Place chicken on grill and cook on high for 10 minutes, then switch to
“Smoke”. Cook for 1 hour on smoke and then switch to medium until done,
approximately 165 degrees internal temperature. Serves 5 people.
